Soup - soup again and again
After one long working day with NO lunch break (but a 2-hour conference call from 1 - 3 pm and then pasta from the microwave - SCHANDE about me) is for me something warming-Nährem. Great for lounging on the couch and having a warm bowl of soup on your lap!
Actually, you can just throw everything in the pot called vegetables or legume and happen to be in the supply.
Today we take for a big pot:
1 leek > strong>, cleaned and chopped
1-2 onions , peeled and chopped
2 carrots (for the North Germans below us: roots), peeled and chopped 1 sweet potato peeled and chopped TK green beans (or of course fresh ones, but unfortunately they did not exist today)
1 can of beans (red, white or mixed), chickpeas also go
a little olive oil with 1 dollop of butter in a hot Pour the pot and fry the vegetables in it.
If it's taken some color h Add 1 liter of water and bring to a boil.
Add to taste 2-3 teaspoons vegetable stock or 3 cubes of organic meat broth (I recommend beef - chicken is not so hearty here). Add a few pinches of spices from stock (eg marjoram, thyme, oregano, nutmeg, etc. - just experiment).
Cook over medium heat for 15 minutes.
Finally, season with salt and black pepper and stir in 1/2 bunch of chopped parsley if available.
